Start with ajiaco, the soup the city wrote into law

A clay bowl lands in front of you and half of Bogotá is in it. Shredded chicken, three kinds of potato, a wheel of corn on the cob, capers, cream, avocado on the side. The city's own legal registry calls ajiaco santafereño an aboriginal dish: corn, the three potatoes and the guasca herb are what the Muisca ate as mazamorras, seasoned with guasca for its bite. 1

The Concejo de Bogotá went further in 2004. Acuerdo 212, filed by concejal Isaac Moreno de Caro, declared the soup a cultural heritage asset of the city, arguing that a shared table builds codes of respect and unity and keeps a local identity intact. Bogotá now marks a Día del Ajiaco Santafereño every 6 August. 1, 2

María Elsy Giraldo cooks at the Plaza Distrital 12 de Octubre, and she draws the line at one ingredient. "Para mí sin guascas no hay ajiaco", she told Infobae in August 2026, and the herb she means grows in the Cundiboyacá highlands around the city. Bogotá publishes its prices unevenly, and that shapes the plan. The market posts its hours and its bathroom fee. A counter open since 1816 has a per-person average on a directory listing. One high-end kitchen runs a live ordering catalog with every peso on it. The two rooms the world rankings care about publish no menu price at all. 3, 4, 6, 9, 8

Cash and cards split along the same line. The directory listing that carries La Puerta Falsa's COP 77,000 average also says cash only. The tasting rooms want a card at booking, and Leo holds one on file against a no-show. Carry pesos for the morning and plastic for the evening. Paloquemao opens at 4:30 in the morning

Paloquemao is a working market first and a food stop second. Av. Calle 19 No. 25-04, open Monday to Saturday from 4:30 a.m. to 4:30 p.m., Sundays and holidays from 5:00 a.m. to the same close. Flowers and wholesale move in the dark. By eight the fruit aisles are loud and the cafeterías are frying. 3

Is La Puerta Falsa worth the queue?

Yes, it's worth the queue: a 200-year-old room, a three-item menu, cash only, and a directory average of COP 77,000 a person. A narrow room, a wooden staircase, and a counter. La Puerta Falsa stands at Calle 11 No. 6-50 in La Candelaria, a short walk from Plaza de Bolívar, and has served customers since 1816. The menu is short on purpose: ajiaco santafereño, tamal, and chocolate santafereño, some of it with cheese. 14

Doors open around 7:00 a.m. Cash only. Degusta, a Colombian restaurant directory, lists an average of COP 77,000 a person, about USD 23 at the rate valid 26 to 28 September 2026. That figure is the directory's own per-person field, so treat it as a planning number and expect a smaller check for a chocolate and a tamal. 14, 4, 5

Bogotá restaurants in Zona G: who is cooking

Zona G is Bogotá's gourmet district, and it sits inside Chapinero. The city's tourism authorities send visitors there for fine dining, and point them at ajiaco santafereño and changua while they are at it. Sources disagree on the exact block range, so use the neighborhood name and the street address of the table you booked. 15, 16

El Chato took first place on Latin America's 50 Best Restaurants in 2025 and sits at number 54 on The World's 50 Best extended 51-100 list. Álvaro Clavijo's room is at Calle 65 No. 4-76, open Monday and Tuesday from 2 p.m. to 11 p.m., Wednesday to Saturday from noon to 11 p.m., and Sunday noon to 5 p.m. The site lists awards, hours and no prices. 9

Leo, Leonor Espinosa's restaurant at Calle 65bis No. 4-23, runs tasting menus of five, eight or twelve courses, with a pairing of wines and local drinks or a botanical pairing without alcohol. Lunch is noon to 3 p.m., dinner 6 to 11 p.m., Monday to Saturday, closed Sundays and holidays. 8

Harry Sasson is the one kitchen at this level that prints numbers. Carrera 9 No. 75-70, opening at noon daily, closing at 11 p.m. Tuesday to Saturday, 10 p.m. on Monday and 5 p.m. on Sundays and holidays. Its own ordering catalog lists 25 starters and six mains portioned to share. 17, 6, 7

How do you book a table in Bogotá?

Book the tasting rooms before you book the flight home. Mesa 24/7 has run online reservations, delivery and pickup in Colombia since 2013, and El Chato is one of the Bogotá restaurants listed on it. Email and phone still work, and for Leo the terms matter as much as the time. 18, 9

  1. Match the kitchen to the night you have free

    El Chato opens at 2 p.m. on Monday and Tuesday and at noon from Wednesday, closing at 5 p.m. on Sunday. Leo closes Sundays and holidays altogether. Harry Sasson stops serving at 5 p.m. on Sundays and holidays. 9, 8, 17

  3. Read Leo's terms before you confirm

    Leo holds a table for 15 minutes, asks for formal-casual elegante dress, admits guests aged 12 and over, and charges COP 320,000 to 600,000 a person for a no-show or a cancellation inside 24 hours, depending on the experience booked. Those terms were last updated in April 2025. 13

  4. Give Andrés Carne de Res its own evening

    The Chía original sits outside the city. Its registration page gives Wednesday and Sunday noon to midnight, Thursday to 2 a.m., Friday and Saturday to 3 a.m., closed Monday and Tuesday except holidays, tables held 15 minutes and capped at six guests. A second page on the same site gives shorter hours and a two-hour table limit. 19

Tipping, tap water and the rules at the table

The tip is yours to decide, and it has a ceiling. Colombia's consumer-protection regulator updated its instructions on restaurant tipping: a suggested tip can go no higher than 10% of the bill, the diner has to be asked before the check is printed, and the diner may drop it or change the amount even after the bill is issued. 10

Tap water is the other quiet saving. Bogotá's mayor and the district health secretariat say the water the EAAB sends to homes, businesses, hospitals and schools is potable, sampled daily at up to 240 points, and rated "no risk" on the national water-quality index across recent monthly reports. That statement dates from May 2024. 11

  • Carry pesos for the morning. The Paloquemao bathroom takes COP 600 in coins, and La Puerta Falsa's listing shows cash only. 3, 4

    The Museo del Oro sits a few blocks away, and MMT's Museo del Oro guide covers tickets and free days. The city's tourism pages point visitors at ajiaco santafereño and changua afterwards; either one makes the lunch. 15

  4. Afternoon, north to Chapinero

    Zona G is the gourmet district inside Chapinero, and El Chato opens there at 2 p.m. on Monday and Tuesday, noon the rest of the week. 15, 9

    Leo serves until 11 p.m., Monday to Saturday. Harry Sasson runs to 11 p.m. Tuesday to Saturday and to 10 p.m. on Monday. Sunday service ends early across this whole tier, so keep Sunday for the market. 8, 17

How much does dinner at El Chato or Leo cost?

Neither publishes a figure. El Chato's site carries hours, address and awards and no prices; Leo lists five, eight and twelve-course tasting menus with pairings and no amount. The numbers circulating online date from 2021 to 2023, stale for menus that change with the season. Leo's late-cancellation band of COP 320,000 to 600,000 a person is the closest public signal of the tier. Ask when you book. 9, 8, 13

What time should I get to Paloquemao?

Between 6 and 9 a.m. The market runs from 4:30 a.m. Monday to Saturday and from 5:00 a.m. on Sundays and holidays, closing at 4:30 p.m. every day.
